Stop at V-1001, a superior product due to its simplicity!

I love the V slicers. I've been using the Borner plain (V-1001) white slicer for years and had to replace it again as the plastic was falling apart after almost daily use for over 5 years. This time I decided to switch to this model to try it out. I realized that good things cannot always be improved upon. This device works on the same concept as the original, but slightly modified. First, the inserts for making small and large strips are the same as previous models, you plug and go. However, the Direct Slicer has changed. You used to have an insert and if you put it in one direction you get very thin slices and if you flip it you get thicker slices. On this model you slide it to the side and on the side of the unit there is a button that you press and you can adjust the depth of the insert and adjust the thickness of the cut accordingly. On paper this sounds divine as you now have more thickness options. The problem is that the button mechanism is difficult to use, awkward to set up, and there's a risk of cutting your finger while fighting. Once the slicer is set up you need to make test cuts to see how they come out and then adjust. V-1001, you know what you're getting before you start. I find it very difficult to use and takes more time than it's worth. The V-1001 is fast, easy to use, set up and clean. This V-7000 is difficult to set up, fickle and difficult to reassemble. (and more expensive). It's also larger, which makes it a bit difficult to store.
