
This is a pie pan and it bakes great, but the folded corners are MORE hand washed. Although I bake on parchment paper so the batter doesn't touch the pan, it takes a few minutes to dry after hand washing. I dry it then press each corner and dry the water that got into the creases, then go around the edge to let the water get under the creased edge and then do it again. Damn! I feel like an idiot if I overlook the "Lasagna Brownies and Cake" pan from the US, which also measures 9x13, the same material but with handles and no folded corners. I think America's Test Kitchen screwed up by choosing this folded corner pan over the molded corner pan and will likely buy these and give these away as gifts. Please note that these aluminum pans transfer heat very quickly and efficiently, so your cake will take less time to bake. at the bottom of the spectrum: keep an eye on the cake as it nears the bottom of the spectrum as it may already be done. My first cake in this recipe was ready 2 minutes before the minimum time recommended in the recipe.
