Homemade Detroit Style Red Top

I live in Metro Detroit and have lots of options for Detroit style red tops - Cloverleaf, Buddy's, Louie's, Shield's are all within driving distance. However, sometimes you just want to cook it at home, and this pan makes it possible. I've cooked several dishes in this pan, as well as a few other dishes that slip out instantly. It's made in the USA, seam welded. It's not blue steel like the car factory originals, but it does what it's supposed to do and you don't need to bake it in. Edit: I've made dozens of pizzas in it since I bought this pan 2 1/2 years ago. . A little olive oil on the batter and it slides straight out giving you the perfect bottom crust - and to get the right "frico" crust (crust of toasted cheese) find a small Italian market with a deli counter, it will be slices of Wisconsin bricks. cheese for you That is the difference. I bake it at 500 degrees for 11-12 minutes and every time it comes out exactly like the picture. Fold the dough around the corners, add a layer of brick cheese and rub it over the edges so it touches the pan - it melts between the crust and the pan to give you a buttery frico, dig in the pepperoni and Add toppings if you like, add fresh mozzarella, then pour the sauce over three strips. I like looking at pepperoni, so I don't bury them. This is a great pan that produces great results. I still give 5 stars.
