Haven't cut yourself yet

All the important safety features on this mandolin can be neglected. You have to remove the guard to use this thing and the vegetable holder doesn't work as well as I would like. A softer thing like a pepper cuts well up to the last third, after which it rubs uselessly against the blade - the holder isn't pushing it deep enough. As you turn the holder sideways to squeeze the vegetables tighter, the blade will slice tiny black plastic pieces into the peppers. Not perfect. But now I know why chefs are in constant danger of injuring themselves horribly when using a mandolin - thin slices melt on the tongue. I hate peppers, but sliced on a mandolin and tossed in umami broth, it tastes very different.
