To be honest I haven't used it yet. But my husband who was a professional chef said it was very high quality. He tried it and was very happy with the result. Since I'm not a professional, I bought protective gloves. He said I should definitely use them!

After the third use I noticed that cutting requires more power and the deep insert lagged behind, potentially making it slippery very dangerous. The dull blade combined with the wrong insert renders an easy-to-clean design useless. The only veggies I used on the mandolin were onions, carrots, zucchini, potatoes, and daikon radish.

All the important safety features on this mandolin can be neglected. You have to remove the guard to use this thing and the vegetable holder doesn't work as well as I would like. A softer thing like a pepper cuts well up to the last third, after which it rubs uselessly against the blade - the holder isn't pushing it deep enough. As you turn the holder sideways to squeeze the vegetables tighter, the blade will slice tiny black plastic pieces into the peppers. Not perfect. But now I know why…
