Update. A new software update released by Apple solved all the touchscreen issues I was having. It looks like the screen protector wasn't the cause after all. I've been using this brand of screen protector for previous iPhones for a number of years. I never had any issues until I applied them to my iPhone 12 Mini's screen. I had some responsiveness issues where I couldn't slide to answer calls or even enter my passcode. There was no problem prior to fitting this screen protector so I am assuming this is the problem. Slightly disappointed but may need to try another brand to see if touchscreen responsiveness has improved.
