Review on Ergonomic Santoku Knife 7In KITAKAMI X50CrMoV15 Steel - Non-Slip Handle Multipurpose Stainless Steel FISSMAN Series by Sharon Holcomb

Revainrating 5 out of 5

8 inches to skin a fish

Very well built, good hardness and great quality steel, but with excellent flexibility. My husband fishes salmon and steelhead and is always filleting fish. He finds this knife well suited for the job, but especially for separating flesh from skin. Generally, he prefers a stiffer fillet knife, and a slightly wider (not thicker) blade for ease of sharpening. Functionally this has a slightly different specialty compared to his others and he's happy to have this quality knife amongst his fillet blades. The handling is good. It's well balanced and feels comfortable to hold. The composite handle makes this easy to clean and care for.Excellent addition to the collection. Five stars for quality.

Pros
  • 14.57 x 1.18 x 3.54 inches
Cons
  • The knife is not recommended for chefs who prioritize aesthetic appeal over functionality
