Never Before - Bench Burner

This appliance has completely changed the way I cook. The impossible became easy. I started to see the difference in a grade C. The first discovery was the temperature of transformation of albumen and yolk. The collagen to gelatin conversion temperature was the second. Holding Turkish Delight at 114ยบC for an hour without supervision, preparing dozens of pancakes with the same browning and perfect texture became a chore, reducing stocks at 90ยบC for several hours allowed us to achieve maximum efficiency reachable without having to be there. The gelation of hydrocolloids, working with sugar at each point of caramelization, reactions that used to require constant attention - all this began to ask and forget to go and not care about the exact time. Programmable combinations of time and temperature allow for fine tuning and then are archived for use at any time with accurate results. Buttering, frying, bagless sous vide in situ and in each solution has changed my entire approach to long braising and short high temperature work. Control freak in a great designer tote, along with a knife roll, fridge and hand blender, allows me to go anywhere and get the results of a well-tuned kitchen with accurate results, regardless of the setting and without the need for a preview. Location. This tool has transformed my outdoor catering, allowing me to cook dishes that previously could not be made in a pop-up venue. The device is just magical.
