I also have an excellent JA Henckels Pro 8" chef's knife (plus the less expensive Calphalon) but after watching the Cooks' Illustrated video recommending Victorinox I really wanted a blade in the Japanese style. I was pleasantly surprised by the relatively low price. After 6 months this is the knife I use most now, especially when I want to cut vegetables very thinly, such as onions. I like the feeling how it fits in my hand knife properly I hand wash immediately after use and steel sharpen before each use Despite frequent use I rarely need a stone to achieve a perfect paper cut with this knife so I am absolutely delighted with this one Messer , the Messer + Stahl makes a great affordable gift for any chef who wants a serious chef's knife.
