I made my own Nepalese momo using a mixture of flour and water, then rolled out and cut out by hand. The dough cutter with this set is kinda goofy. It just doesn't roll smoothly and I tried it with different thicknesses of dough for 20 minutes. A simple round cut would have been much better. Real dumpling press tools are too small - they can't have much filling at all. My sister in law is from Nepal and she showed me how to make real momo using a glass of water as a cutter and then the technique of hand stretching and assembling dumplings - she is an expert! The dough stretches well and you can fill more dumplings with the manual method. These presses might be good for ravioli, but they're a little lame for actual dumplings.
