Inform immediately that you have been digesting food for many years. Other thermometers are slow and the food cools the meat and long pins so the temperature is off. Plus, the extra probe is great for smoking or slow grilling. I love both probes very much, they are very comfortable. Stop buying old gauges with big plugs full of junk and it was cheaper than any I've had.
