Much better than the old mandolins and versatile too!

This is a great tool I mainly use the mandolin for chopping, slicing and chopping vegetables for salads. Oxo did a great job developing this tool. It is easy to use and easy to clean. I have no problem storing it in one of my kitchen drawers. It cuts cabbage and other vegetables as thin as paper. If you are using a mandolin knife, also purchase a cut-resistant glove, as the supplied hand guards are not suitable for all applications. I read the reviews here before purchasing. mandolin, and I see the handguard being criticized by several reviewers. I think that may be because their applications aren't well suited to using the handle. In practice, I use manual protection for everything except when I start chopping a large piece of veg, e.g. B. a quarter cabbage. In these cases, I use a cut-resistant glove to start chopping, and then when the cabbage is finely chopped, I switch to hand protection. After a bit of experimentation, I found that handguards are useful for almost every application. However, I don't think a cut-resistant glove is optional when using mandolins. I believe they are necessary. Good ones only cost about ten dollars and can prevent serious injury. I keep finding new uses for the mandolin. And I even bought a second mandolin to keep handy on the countertop. This is the one-handed Oxo model, small and light.
