I got this book of socks with replaceable soles from Anna Silburg. This is a sock that is knit flat after picking up rib and lifting sts at the top. You make an instep flap of sorts, then work your way back up, picking up the slipped sts on each side until you have a closed toe tube. How you pick up the stitches will determine whether you increase for the toe or instep, and then continue to the heel of the short row. After that you can just start knitting in rounds to complete the leg of the sock. To remake the sole, rip out any holey pieces, pick up the sole and knit, attaching to a row of undamaged loops. This is useful for multi-strand knits as the strands stay on the leg and instep and the sole is a solid single yarn. I've tried it and it makes great Turkish or Fairisle style socks. It's not as fast as circular knitting, but it really works. If you put a lot of work into twisted socks or use fancy yarn for the upper, you can use a heavier yarn for the sole.
