I make my own kefir with water and have always found it difficult to stop the brewing process at the right moment with the right amount of residual sugar in it to avoid damaging kefir mushrooms, but I always thought such devices were very difficult to use, but this Lnicez Instruments Digital Brix Refractometer is definitely not difficult to use at all. It was already perfectly calibrated, but could be restored in seconds with distilled water and a simple push of a button. It also comes with a dropper that I use to take the right amount of liquid (6 drops) needed for a proper reading. To test the accuracy I added 10g of cane sugar to 100ml of distilled water (that would be 9.0% sugar) and this device gave me a reading of 8.9% on the first try which I definitely find very accurate and the Testing process was very easy and quick. Now it helps me a lot to improve the process of making water kefir.
