Keep Your Knives Sharp

The SE sharpening set consists of four whetstones attached to two handles, two for each handle. Grit includes: 600, 800, 1200 and 2000 (higher numbers mean finer grit). Unlike honing tools, whetstones remove some of the surface metal from the blades when you sharpen their edge. Only sharpen if the edge of the blade is dull or damaged. (Reserve a coarser grit to treat edge damage; finish with a fine grit.) The handles are plastic and the stones themselves are of acceptable quality. You can use some edible vegetable oil to treat the surface of the stones. After sharpening, be sure to thoroughly clean and disinfect all blades used for cooking. Do not apply motor or machine oil to the stones if any of your blades will be used on food. The stones work well as long as you take your time, use gentle movements, and don't try to sharpen the blades. Great way to keep the blades in shape. Tip: Lay the fabric on a flat work surface. Place the stone you want to use face up on the fabric. Hold the stones by the handle as you slowly and steadily slide the blade across the stone. These stones are ideal for knives with a small blade (about 12 inches or less). stones, but it gets harder. Note: These stones are not suitable for ceramic blades, only for metal. (Diamond sharpeners should be used for ceramic blades.)
