This was the secret ingredient that kept me from making tamales from scratch. It's not that difficult to turn and quickly grinds nixtamalized (mildly cooked, lime-treated corn) into a fluffy texture that's perfect for tamales. I also bake bread and grinding whole grains does a good job when a recipe calls for a specific grind.
