Calibrate the probe. May be inaccurate
I was glad it matched the meat thermometer I had and it was metal so will last a long time but when I used it on my turkeys it stayed the temperature unfortunately at 166 degrees. I got the turkey an hour earlier than I should have and it was very dry. It never occurred to me that there could be problems with something as simple as a probe.
