Great knife at a reasonable price

Was very impressed with the Tojiro Gyutou knife I bought earlier but wanted a shorter knife for small items. Perfect length for cutting small items and veggies Good all round knife *Very* sharp and holds an edge well For the price these knives can't be beat Use a Kyocera ceramic honing stick and these knives come out very sharp edge. I prefer them to the more expensive Global knives I've had before. It has never been possible to get a Globals edge as sharp as with these Tojiro knives. The edge seems to be firmer than the globals as I had a chip on the top of two globals and towards the end, let's see but very happy with Tojiro knives so far.
