Amazing knife. Amazing price.

I used the Shun version of this knife (Asian chef's knife or chef's knife). Tojiro is just as flavorful, if not spicier! At a low price, this is by far the best buy. Sure, Shun has a good D knob (personal preference), but these knobs are great. Comfortable, no play, not slippery. Now I use this and Tojiro Nakiri daily. I've used a sharpener but I can say it doesn't do any good as this knife doesn't need to be sharpened. Now I will continue to expand the line of Tojiro DP knives. I would…

Large Japanese Knife

Bought as a gift for a person who knows about kitchen knives, but not very high quality. This is the first knife of this type (Japanese, expensive) that she uses and is very happy with. This is a raise of the level of mediocrity. There's a whole different feeling. It feels light and is easy to use. Cutting is almost effortless. As for maintenance, I don't know yet as I haven't had any maintenance or regrinding - time will tell. So far, so good. I recommend it to those who want the best…

Great knife at a reasonable price

Was very impressed with the Tojiro Gyutou knife I bought earlier but wanted a shorter knife for small items. Perfect length for cutting small items and veggies Good all round knife *Very* sharp and holds an edge well For the price these knives can't be beat Use a Kyocera ceramic honing stick and these knives come out very sharp edge. The best knife I've ever used!
