I've been using Chemex for about a week now and I really don't like it. I've bought and used their filters, followed the directions and changed the amount of coffee grounds I use, but the taste is still not the same! And it's not hot enough yet. I usually use a stainless steel French Press, but I've heard and read so many good things about Chemex that I wanted to try it. I just don't get it and I'm so disappointed. The coffee is warm, not hot and weak. The water doesn't stay in the thicket long enough to develop a strong, full-bodied flavor. I also think the paper filters give it an odd taste. I don't know what else it could be. I can use the same amount of soil in a French press and it tastes great, but I don't like the taste of Chemex. I will say that a chemex is much easier to clean than a french press. You simply fold the used filter with the thick inside and throw it away; Rinse the carafe and you're done. Maybe I'll give it away to someone else who will appreciate it. To me, it's just not as good for a cup of coffee as a French Press.
