A chef once told me that the most dangerous tool in the kitchen is a dull knife. If the blade slips sideways when slicing tomatoes or onions, this can cause problems. Another reason to buy this knife sharpener! This sharpener will definitely get the job done - safely and quickly. I've used it a few times and am really starting to get the hang of it. Start with a few hard hits on the left side, then move on to the right side. Press down gently as you extend the blade. I find that 3-4 passes on each side gets the job done. The entire process takes no more than a minute or two. The last few days I compared this sharpener to a sharpener. Both work. The question is which one is better? I would say this tool is easier and safer to use than honing steel. For these reasons, I would probably choose this sharpening tool over the sharpening steel. But sharpening steel with practice will potentially make your knives a little sharper. It's hard to say that there's a huge difference between the two, as both make your knives sharper than before. But if this sharpener saves you so much as a cut finger or, God forbid, a trip to the ER, well, I think it's worth it. As with anything you use knives for, please be careful with this sharpener. While this product makes knife sharpening much safer, you can still injure yourself if you don't pay enough attention to it. However, this is a great, well made and durable product.
