What do professional butchers use?

I love these deer carving knives. Good steel, easy to sharpen, well assembled, great grips, what's not to like? This is the brand my dad and his dad used in the restaurant to process beef halves and whole calves and is what I've seen in meat packing plants. They have some flexibility, ideal for trimming silver leather. They are also good for slicing steaks. For this price you should buy several. Now I have 3 of these and they will give me plenty of meat before I have to start sharpening. If you have a buddy around, you can also throw a knife at them and make it work! Okay, maybe not give up.
