This press is easy to clean. It will slowly squeeze the tofu over time. The drip tray is very useful. I can tighten the screws, go, come back, tighten some more. The longer I leave it, the better the texture of the tofu becomes. You can put cans and the like on it if you're too busy to tighten the screws. The top is very flat. This press made a very thick tofu. Things I couldn't do with plates and weights. If you are willing to put in the time, this press will give you very nice textures.
