When using a new brewer, finding the right grind size is the hardest part. I got a pretty good grind for this brewer right off the bat. Medium, like buying ground coffee. Controlling the flow rate with a metal cone was basically the same as using a paper filter if you have the right grind size. The finished product was a little different than the usual pour-over paper filters. More oil got into the coffee, making the final texture silkier. If you're worried about fine metal filter particles, don't worry, I've had almost none at the bottom of the cup. Overall, I got a very similar taste to using Chemex. Slightly less clarity but I take that for a drinking texture.
