I assume the finish is some kind of polyurethane but don't know. Since I got them to use with food and don't know the temperature range or if the finish is food safe I felt it was safe to remove. After sanding the old finish off and applying a liberal amount of mineral oil they are pretty nice. Nice sizes and useful shapes and good handle lengths. I like this style over standard ladles. I have some made for woks but they are all metal. Recently I got some ceramic glazed iron pots and wanted, well, a large capacity serving spoon that would both look nice and be safe to use. So here we are.
