They prevent food from sticking to the pan very well. Amazing customer service, responded to my confusion regarding cleaning immediately. The suggestion of making a paste of baking soda and lemon juice will remove excess oil or fat. Very hot water with gloves on and a good dish soap works well too. Didn't try the vodka although that was another piece of advice read about. Using vodka as a cleanser despite drinking it probably won't hurt lol! From an environmental point of view, I prefer reusable mats to using lots of aluminum foil and parchment paper. And I definitely don't mind saving money by not buying these things. I've edited my comment below as I learned from further reading that this is common to ALL silicone mats, NOT specific to them. And appearance doesn't affect their non-stick properties! Sorry I only found out about this after the original review was posted. Please disregard this previous discoloration comment like any kind of criticism. Again, this happens with any silicone mat, so I'm leaving a comment so others don't see this as a problem, as I did initially, mistakenly. "However, with somewhat limited use, they develop brown spots that I have not been able to remove (so far there are new tips to try). I did not remove all of the oil/grease and burned onto the mat which may result in brown stains. I've just read that boiling in water or vinegar will help break up the deposits and remove the oil/grease." Again, I've now found out that this is normal and maybe why others don't mention it. FYI: It There seems to be a general consensus that heat is important to thoroughly remove oil/grease residues..The effectiveness of non-stick coating, environmental friendliness and cost savings make them indispensable helpers in the kitchen!
