Bought this knife for handling poultry and light bone cuts. One of my first jobs was cooking a turkey for Thanksgiving dinner. The bones are a bit tougher than chicken bones, but I was very careful with this knife. Cut through the spine with little effort but while cleaning the knife I noticed some very small chips where I had used the knife to cut through the wish bone. I was able to grind the shavings off with my whetstones, but that was disappointing as I expected a heavier edge from a knife of this style. I can understand if it was a cutting knife but no luck. It's a razor sharp knife, but now it can only be used for boneless cuts. I still have to use the meat judiciously for bone cuts. I believe that a much cheaper knife could do the job better.
