I only bought this to cut large fillets but it's my everyday knife now

Incredible quality, comparable if not better than other major brands and I have knives from Shun, Henckels and Wüstof. If you are looking for a very versatile and useful knife, I highly recommend it.

Uneven Grinding: Kitchen & Dining

Let me start by saying that I either hit or miss with Dalstrong products. Knife* Hard blade, not flexible* Suitable for slaughtering Disadvantages:* Uneven sharpening at the tip. Probably 70/30 on top if not worse. I need to fix it on wet rocks. *You deduct a star for that* Damascus looks engraved like all of Dalstrong's shoguns.

Worth seeing - knives and forks for carving

The knife was originally curved and had very few traces of damask. I contacted Dalstrong and they immediately sent me a new one and told me to keep the original. A replacement came in and it's great (also slightly bent but working), they offered a refund for the second bent knife but I like it and overall it's worth the money. Great service and nice product but be aware that it is made in China and shipped worldwide.

A+ experience required

One of the best knives I have ever owned. Working in the catering industry for over 35 years. The packaging is the best, it says a lot about the company and how they feel about their product the way the packaging is. Quality A+ Effortless cutting of peppers, tomatoes and courgettes. Perfect balance, pleasant feel, these will be my new and only knives to use from this day forward. Thank you Dalstrong for making and caring for your wonderful knives.

Great quality and style!

Only used once but so far so good. I prefer the traditional ox-nosed butcher knife to other designs, and I have quite a variety of grades and steels. I like the Damascus design as it is very eye-catching. The middle layer is made of high quality super steel from Japan. I think that might be my butcher knife. I have already started replacing several other knives in my kitchen with Dalstrong knives.

Questionable quality of the steel

The steel of this product is questionable as it was scratched when washed with an ordinary dish sponge. Unfortunately, the camera doesn't capture it as clearly as with the naked eye, which is probably due to the lighting. If you look closely you can see horizontal, straight lines from the sponge running the length of the blade. This shouldn't happen with quality steel for a $100+ knife. A very good knife with limitations.

Bought this knife for handling poultry and light bone cuts. One of my first jobs was cooking a turkey for Thanksgiving dinner. The bones are a bit tougher than chicken bones, but I was very careful with this knife. Cut through the spine with little effort but while cleaning the knife I noticed some very small chips where I had used the knife to cut through the wish bone. I was able to grind the shavings off with my whetstones, but that was disappointing as I expected a heavier edge from a knife
