The steel of this product is questionable as it was scratched when washed with an ordinary dish sponge. Unfortunately, the camera doesn't capture it as clearly as with the naked eye, which is probably due to the lighting. If you look closely you can see horizontal, straight lines from the sponge running the length of the blade. This shouldn't happen with quality steel for a $100+ knife. However, the knife was sharp and did its job of cutting the brisket. Functionality is available, the steel quality is questionable.
