I currently have several Wüsthof Classic knives that I have been using for about 10 years. Newly added Dalstrong Shogun series knives. Wüstof knives are moderately sharp and although I have tried many different sharpeners I have never been able to improve them. Dalstrong knives are incredibly sharp, and Wustof is no match for them. I bought these sharpeners thinking what the heck if they are not as advertised what am I missing out on. When I received the sharpener, I diligently tried it out by following the instructions. Wow! Wüstof knives are now comparable to Dalstrong knives. I am surprised and very pleased. The main thing is to follow the instructions verbatim as they are different from the manual sharpeners most of you are familiar with. I just ordered one for my son. The only thing I can't guarantee is how long they'll keep this sharp. Dalstrong holds his edge very well.
