Great sharpener. for knife sharpener

I am a retired chef and I have always sharpened my knives with a whetstone which was a long and tedious process. This device is fast and sharpens my knives better than before. Be sure to apply downward pressure when using the device and use more strokes than recommended. I highly recommend wiping the knife after each step and cleaning the sharpened blade before use.

TO AVOID EVERYTHING: BROKEN KNIVES

This so called sharpener has irrevocably damaged my knives - all the ones I've gone through. European knives received ugly, permanent half-inch scratches along the entire length of the blade. Asian knives had visible burrs on the edge. The best name for this device is KNIFE WRECKER. I have had Henckels knives for over 30 years. and now the ones i went through are forever damaged. Of course they came out sharper. and uglier, like f#$^% with deep scratches that will never go away. Even if you get

Damaged Blade - Cutlery & Knife Accessories

I bought this based on a review from America's Test Kitchen which said this sharpener was recommended. Although I used the same knife that ATK used in their test (Victorinox Fibrox 8 in Chef's Knife) in the 15 degree slot as in the test, my results with this sharpener were terrible. The blade is hollowed out, the cutting edge completely destroyed. I switched to the 20 degree slot thinking that might be the problem and spent much more time than the sharpening slot instructions recommended trying

Nice sharpener that saves your old blades

This sharpener rescued some old battered straight edge steak knives from the mid 60's that hung in drawers for decades (I practiced sharpening them as a kid and I didn't work very well). It gives a very sharp edge to every knife I've used it with, but it's not necessarily the prettiest edge due to the micro-scratches it leaves. For this reason I didn't want to use it for my "fancy" knives. Also, and this is very important if your knife isn't already sharpened to a precise angle, any groove you…

Sharpens well in knife sharpeners

Bought to replace an old Henkels sharpener. I use my sharpener sparingly and use the steel daily. I received the sharpener on the promised day in a Revain soft pack. There were usually no problems with soft packaging, but the product packaging was opened during transport. I was disappointed not to find any instructions on the product packaging, but had to search Revain for instructions under Your Orders / Get Product Support / View Manuals and Manuals I Printed. A very impressive sharpener if you follow the instructions.

I currently have several Wüsthof Classic knives that I have been using for about 10 years. Newly added Dalstrong Shogun series knives. Wüstof knives are moderately sharp and although I have tried many different sharpeners I have never been able to improve them. Dalstrong knives are incredibly sharp, and Wustof is no match for them. I bought these sharpeners thinking what the heck if they are not as advertised what am I missing out on. When I received the sharpener, I diligently tried it out by…

Works better than the branded electric sharpener I have.

I also have ChefsChoice #463 for Asian knives and I wasn't very happy with it until I realized I was using it completely wrong. I learned from one of the reviews that these sharpeners require a sawing motion to sharpen the knives, not a one-way motion. I didn't have the user manual so I downloaded the manual in .PDF format. When I used the sharpener properly, it worked surprisingly well. So I decided to order this sharpener, which works for both Asian knives and European-American knives. I have

  • Some minor issues

Incredibly fast and powerful. I have different sharpening systems for kitchen and sports knives. Anything from water stones to diamond stones, edge systems, sharpeners, diamond pads, slurries, you name it. felt slings and blocks. I use American/Euro profile knives as well as 15 degree Asian knives. From stainless steel to tool steel M390, D2, D4, damask to carbon steel. In other words, I'm kind of in. I have owned and used Chef's Choice motorized and manual sharpeners. When it comes to comfort…

Good product for cutlery and knife accessories

So far so good. Follow the instructions. Reviewers who had problems either had a defective product or didn't follow directions. 4-5 pounds of downward force with smooth blade back and forth strokes. I've always used a set of Lansky stones, but sharpening a knife takes time and I've always had trouble maintaining the sharpening angle with a longer kitchen knife. And there was a ridge. This tool is really easy to use. If you have used a hand stone before, you can feel the work of the roller…

The best homemade kitchen knife sharpener!

This sharpener will appeal to both novice and experienced cooks. I have a large collection of European (Henckels & Wustof) and Asian (MAC) kitchen knives and I want them to be very sharp for ease of use and safety. I also have a large collection of manual and electric knife sharpeners that I never use because 1) they don't make knives particularly sharp 2) they take a lot of time and skill to use 3) they don't work on both Asians and Asians work and European knives and 4). They are large and…
