I'm glad I didn't do it for Griddles

I've spent almost 5 times more than this item on a freestanding gas pan. I'm glad I didn't. This grill-to-pan conversion element works well and gives me more control over surface temperature variations than a freestanding carbon steel pan. I am very familiar with cooking on stainless steel surfaces. Rule number one: Make sure the surface is as clean and polished as possible before heating and placing food on it. Right out of the box, this pan has a pretty nice brushed finish. comparable to what you would expect from reasonably priced SS cookware. I've found that if you can see yourself on the surface of a stainless steel cookware, it can function as a non-stick cookware and requires minimal maintenance between uses. After washing my new frying pan, I polished the hob in 5 stages. Starting with 400 grit wet or dry sandpaper and working my way up to 800, 1500, and 2000 grit, I prepared the surface for the final polish. Using a 6" double-orbit buff with a terry cloth top cap, I applied Wenol metal polish (red tube - available from Revain) and polished almost to a mirror finish. The last step in this process is to clean the pan with a strong degreaser. and rinse well. Today I cooked 18 ounce thick slices of peppered bacon in my new skillet. The results were excellent. Once cool, peeling took less than 10 minutes. The drip tray is more than adequate. Fat. Tray was less than 1/2 full when cooking was complete. There was no heat distortion during cooking. The welded construction of this piece is solid. No leaky seams. Really bad product issue I have no problem recommending this product for use on your gas grill. Some stainless steel products will rust if not thoroughly cleaned before storage. I just checked the surface of my frying pan and noticed that the magnet is sticking to it. This means that salt (including salty air) and caustic sauces and condiments will eventually attack the metal if left on the surface. These new findings do not mean that my 5-star rating should be changed. However, if you are considering getting this neat little grilling accessory, you should be aware that a certain amount of care is required before storing the pan for a long period of time.
