Review on 🔪 DALSTRONG 8" Chef Cleaver Hybrid Knife - Shogun Series Crixus: Razor Sharp Meat Knife - Japanese AUS-10V Super Steel - with Sheath by Kim Mouton

Revainrating 5 out of 5

The best knife I've ever had.

And I had sets from Wüsthof, Cutco, Henkel and a few other well known brands that I ended up selling. I have had Dalstrong knives for over a year now and am beyond happy and impressed. As the saying goes, this particular model/style is my main choice of knives. This and a 4 inch paring knife is pretty much all I need for general kitchen work. Of course, I use specialty knives when warranted (fish, large chunks of meat - even ones I could make if I were too lazy to dig up specialty knives), but I can do pretty much anything with Crixus... it cuts, chops, rolls and cuts easily, making it extremely versatile. It holds a razor sharp edge for a very long time, is well balanced and feels good in the hand. This knife replaces several other knives I have and will likely sell. a small hatchet, a kiritsuke, and a long utility knife. Since I live in two places, I'm about to buy a second one.

Pros
  • Unprecedented performance: The relentlessly sharp, scalpel-like edge is hand-polished to a mirror finish at a stunning angle of 8-12° on each side using the traditional three-stage Honbazuke method. The curved profile allows you to make consistent, perfect slices, while the width and weighted front half allow you to slice like a cleaver. Nitrogen cooling for improved cable, flexibility and resistance to corrosion. Full shank for superior strength and triple rivets for added strength.
