The backlight of the screen turns off automatically to save energy. Touch the (S/S) icon to illuminate the screen without changing the meat type or flavor. The idea behind this digital meat thermometer is that you can stick the probe into the meat and leave it in the smoker, grill or oven, leave the digital thermometer out, select the meat type and flavor and then check the temperature of the meat as it cooks . the entire cooking process. The food thermometer will beep when the cooking temperature reaches the alarm temperature. Works well! Very happy with it.
