
First of all, this is my first bread maker. Coming from a celiac family, I currently only bake gluten free bread. I saw one negative review about a collapsing paddle which wasn't an issue here. The image I've attached shows the opening of a collapsing rudder. It's about 1/2 inch deep and 3/4 inch long. Depending on how you slice the bread, you'll end up with one or two slices. I've gotten bread from others with much bigger holes. If you don't like the folding paddle, this machine also comes with a fixed paddle. Enough of it. Like I said, I'm new to bread baking. I did not delve into non-standard flour mixtures. I only use Bob's Red Mill Bread Mix. Each bun comes out great just like the picture. White, whole grain and cinnamon raisins, doesn't matter. The texture is great, as is the taste. Book and instructions are well done. I look forward to a second casserole dish for regular bread.
