So I recently bought this for my pasta (I wanted to try the Swiss method instead of the French). If I'm melting the sugar in the egg whites over a double grill, I need the temperature as fast as possible so the egg whites don't boil. I hook up a thermometer and the instructions say you'll get a reading within 5 seconds, but it literally took me over 30 seconds and the time is CRITICAL! It started at 85 degrees and it took me at 118. But the thermometer is rising SO SLOWLY. For example: it goes from 85 to 85.4, then 85.9, then 86.5, 87.0 and over 110, and it's painfully slow. I can't return because unfortunately I've waited too long to use it and my return window just closed, but I'll definitely buy another one. My only?
