I just opened one of these early (can't resist) five days before the bottle conditioning was completed. What a pleasant surprise. I think this is the best IPA I've ever made and I'm sure the party will sell out fast when my friends try it. I left it in primary fermentation for about a week and filtered it, then dry hopped it in secondary fermentation for about five days after the first week of secondary fermentation. I filtered it again before bottling and the clarity of the beer is amazing. The hop stays there long after the beer is drunk, but it's so runny. Maybe I can get some of those bush light jerks on the bright side with this one. Great beer.
