Update: The second one I ordered had the same problem. The flexible cable probe is not waterproof. This is the third digital thermometer I've tried in the last month. The first two didn't fit at all and I sent them back via Revain with no problems. I ordered this one and the initial setup was easy and I was glad to be able to calibrate it. I make cheese and it's important to me to see the exact temperature. It had the features I needed for this purpose, especially with the flexible wire probe. Now the flexible wire probe won't work after one time use even after recalibration. You can see this in my photo of the ice water slurry on the left where the wire probe is not reading properly. The fold-out probe still works. I'll get a replacement because it's mostly good and I'm hoping I don't get a damaged flex wire this time.
