I have 10 different filleting knives because I keep buying them in search of quality. I recently bought a Bubba blade for $50 and I love it, good grip, sharp blade but too expensive and I'm scared of dropping it in the water. Then I found out what professional butchers use, Dexter, and I realized that for $12 I found a top quality blade that I will buy again and again. Watch a video of a professional butcher, you will see how he is constantly sharpening the blade on the grinder. I bought a separate plastic sheath, the thing is so sharp that I have to defend myself. My choice now is Dexter and a $10 sharpener and I'm done searching.
