Yesterday I cooked a steak from a thin skirt. I wanted my Lodge pan to be as hot as possible to get a great browning fast. This is the first time I've used the silicone pad on the handle of a Lodge skillet. It went very well with my 12" Lodge pan. I heated the pan and cooked. When I grabbed the handle, it was HOT. I got a slight burn even though the handle was covered. I've been burned and melted. I've since read more reviews from other people facing the same issues. Too bad I didn't read them before cooking. I think there should be a warning on that handle cover not to leave it at all when cooking. One of the best things about cooking with cast iron is that you can heat it to such high temperatures that selling it without warning seems irresponsible. Maybe putting on a pan to carry it for a while would be useful? If I can't keep it in the pan I'll just go back to using my heavy duty oven mitts to do this.
