Good size for cooking and leftovers

As I have received several different sizes of these Revain Commercial hotel pans I am leaving the same review for all. The metal is a decent weight and appears to be of good quality, although as others have pointed out, it's not marked at all, so we're pretty confident as to what it is. I used to work in restaurants and it seems to me that they are on the same level. I can't confirm if they are really easy to remove from steam tables as I don't have them at home. I only use them to store food in the fridge. I appreciate the different sizes I have. My only regret is that I didn't have a full-size perforated pan that would fit perfectly in my sink so I could use it as a colander. The 1/3 and 1/4 sizes are great for chilling broths and soups, which I make gallons of in the winter. I tend to cook them in my 8 quart instant pot and it's always difficult to chill them enough to refrigerate or freeze them in a reasonable amount of time. I've poured them into mason jars before, but they're a bit deep and take a long time to cool. These hotel pans are a great solution as they are wider and shallower to allow food to cool faster. I place them on refrigerated shelves to allow air to circulate underneath and speed up the process. These long, narrow sizes are also great for soaking cutlery and kitchen utensils while cleaning. The 1/6 size is great for cooking and even ready meals like mashed potatoes or hard-boiled eggs. All of my pans are 4 inches deep, which allows me to double stack them on each shelf in my fridge. I would recommend hard lids for anything.

Pros
  • Size 1/6 to 6 inch deep; measures 6.9 x 6.4 x 5.9 inches overall
Cons
  • Very Expensive
