FIRST AND BEAUTIFUL

First class --- as always. Whether bread or cake, breads are wonderful. Very easy to care for, but must be hand washed; Never use a dishwasher or anything that could scratch the inner lining. If you like wall-mounted display cases in your kitchen, this lunch box makes a great accent (but I keep my bakeware in a closet with tight-fitting doors). For the record, this great-grandmother never uses nonstick spray on a good baking pan. To avoid sticking, I melt the ghee and/or canola oil and then spread the oil/butter on the inside of the casserole dish. Using a fine sieve, sift some all-purpose flour into the pan; spread on the inside, shaking the flour along the bottom and sides. Invert the casserole dish over the trash bag, gently tap the bottom of the bowl to dump the excess flour; Set the pan aside until ready to add the batter. There are still Nordic Ware pans from the 60s, 70s and 80s. Pans from this century are easier to keep clean (the technique is good!).
