Not as difficult as I feared

I haven't bought a vacuum sealer in about 15 years because I've always been put off by reviews saying they just didn't work or were difficult to use. I've found that there's a short learning curve when you realize that you have to put the edge of the bag in the *middle* of the small channel if you want air to be sucked out of it. What I tried first was to just lay it all the way over the duct so that the edge is on the opposite side and no air can be drawn through the duct. fill the bag. And from time to time, things in the bag will shrink strangely, so she doesn't think she's letting all the air out, but you can just manually press the seal button to pause her fight. One thing I only remembered a couple of times but was cool was sealing things like bags of chips. It only works on some materials, but it's nice. I've also used this to dry-age meat in umai bags and store jerky in the freezer. And then I'm also sous vide with him. I didn't think I would use it often, but I end up using it several times a week.
