Sous-Vide is terrific
I've used the sous-vide process now 3 times since purchase and have been impressed with the ease of use and the results. What I've liked best is the ability to take 1-1/2 inch steak out of the freezer and 3 hours later remove it from the bag, sear it and plate it.
