I'm always on the lookout for aluminum mini cake pans and it never occurred to me that I could buy reusable mini cake pans, but somewhere I saw her and the light went out. I make a lot of spinach, ricotta, feta, artichoke cakes, and full size 8 or 9 inch pans are way too much and I end up freezing leftovers. Since I can't successfully scale down the recipe, I now make the full recipe and break it down into these pans, bake it, freeze it in the pan, take it out and put it in a plastic container until I'm ready to eat it . and put back in the pot to warm up. I've also divided other casseroles into these pans and made the same thing. I benefit a lot from them. The non-stick surface makes cleaning easier.
