Review on πŸ”₯ Powerful KitchenAid KSM8990OB Commercial Countertop Mixer - Perfect for Professional Kitchens by Kevin Bigelow

Powerful drive that is worth the investment!

I am very happy with this blender! This is our fourth KitchenAid mixer in 25 years. All others still work like new - we just needed more. We wanted a heavier model for making different types of dough. The dough is the hardest part for a mixer. Commercial models have a completely redesigned gearbox. I don't know exactly how the gearbox has changed internally since it is now sealed and part of the motor assembly, but it is now a right angle configuration. Earlier models used multiple gears that were subject to faster wear, especially when kneading large amounts of dough. It looks like the motor is now aligned/joined with an extra joint. The entire transmission mechanism is much simpler with fewer moving parts, resulting in a significantly quieter mixer. Another benefit of this new gear design is that there is no leakage of lubricant as the mixer ages. In earlier models, grease leaked out after many years because the grease disintegrated and settled. This necessitated a periodic gearbox overhaul, which involved completely removing the old grease and replacing it with fresh, food-grade grease. The mixer runs very quietly when running at high speed. It depends on what type of attachment is used and how well balanced it is. We have purchased additional 8 liter and 5 liter "J" handle containers designed for this blender. The 5 liters are great for making small batches. The only thing is that the bowl guard does not close the gap between the top of the 5 liter bowl and the bowl guard as the distance between the mounting tabs and the top of the bowl is much shorter. We also bought 1 extra spatula, dough hook and whisk available here at Revain so we can cook or scrape while another batch is in the mixer. Another major upgrade is the Whisk/Whisk. The design uses 11 wires that are more densely arranged in a rectangular profile. We noticed that the egg white beats significantly faster compared to our Pro 6. I think this is because the wires aren't symmetrical, so always hit in a different area of the pitched ingredient. Everything that can come into contact with food. made of stainless steel, including planetary gear and bowl protection. Grommets are much heavier, especially the dough hook. The dough hook is not balanced and the manual warns against running the mixer at speeds higher than 2. I did a test and the mixer will rock on the counter when run at high speed with the dough hook attached. The key guard is a great security feature, extremely easy and unobtrusive to use. We especially like having small children near the agitator when it is in operation. This will prevent their fingers from getting inside where this more powerful blender could cause serious injury.
