I had one of these years ago and accidentally forgot it when I left my last home. When I finally replaced it, my cookies were again reliably golden and flaky with a crispy crust. My galettes were flaky, crunchy, and golden, and all of the fruit was baked to perfection. There is a slight adjustment to the recipe time. For this pan to perform at its best, allow the oven to fully heat to the optimum baking temperature before placing your baked goods in, then add 5-7 minutes to the total baking time. You will not be disappointed. Easy to clean but do not use harsh abrasives, just soap and a soft sponge. My last one had darkened in a decade of use, but it still made the best baked goods—much better than a regular baking sheet.
