Black plaque dissolves in food at any level of humidity.
I really liked the look of this cookware BUT. the finish came off on foods, especially foods that were wetter or more liquid. A serving spoon left in the hummus during the party resulted in the black finish being mixed into the hummus. Several pieces of cutlery suffered the same fate and our food had to be thrown away.
