I know a thing or two about thermometers because I collect them for smoking. Each piece is slightly different and may even have different temperatures at different sections of the cut. I was intrigued by this thermometer because it reads instantly and has a meat glue and control probe for prolonged smoking/cooking. It seems fairly accurate at taking temperature, hanging alongside built-in smoke probes, my dual Thermopro thermometer, and my Wi-Fi Inkbird. Tempo is pace. While the other two are set differently they will do whatever they can to make my burnt ends look great today. Excellent purchase!
