I am an avid tea drinker. I drink different types of tea and before buying this teapot I would use the boil and chill method with a teapot on the stovetop and a thermometer. I have no regrets since I bought this teapot! This is the perfect size for making 4 cups or less. I originally bought it for variable temperature because I was interested in the gongfu brewing method, but I use it for all my teas. Variable brewing is different from pressing a single button to boil. The kettle performs "pulse heating" as it heats up, stopping in short pulses until it reaches the temperature shown on the dial. It takes about 5 minutes to reach the desired temperature. That's a bit illogical, but not a defect. Overall I am satisfied with this purchase.
